Dessert Disaster- Need Help!
I tried to make a Pineapple Zucchini Cake last night for a meeting that I have tonight. Well, the batter was described as stiff and dry and mine was clearly neither of these. I think I didn't drain the pineapple enough. When the cake was supposed to be done I took it out of the oven, put it on the cooling rack and watched as uncooked batter dripped from the center pf cake. 
Ugh! We ended up cooking it for about 30 more min until it stopped jiggling, figuring this meant that the middle was finally cooked. However, I'm pretty sure the outside is over cooked since the little taste test I took this morning was VERY chewy. 
I don't think I'm going to bring it to my meeting tonight because I don't want it to be awful and I don't really have a way to try a piece beforehand.
Please give me your simple, yet impressive, dessert that I can make before my meeting tonight at 7. I can have DH pick up the ingredients today, so I'll have about 1.5 hour tonight to remake something.
