What do you like to serve for lunch?

I have an idea about what to serve a few guests for lunch this week and I wanted some opinions on the menu.  I was thinking about making spinach tortellini soup, buttermilk cornmeal muffins and/or garlic cheddar biscuits (the red lobster copycat) and a fruit salad.  What do you think?  Is that a good menu? Would you change anything?  My guests said that they really don't want a dessert.  What do you like to serve for lunch?

  • I'd do a sandwich and salad or soup and salad combo with one of the aforementioned bread options.  

     More options, and if you do one big salad it will be super easy.

  • I'd add some sort of protein- a tossed salad with chicken, seafood salad, wraps with deli meat.  I know they said they didn't want dessert, but I'd sill have some cookies, brownies, or chocolates.  It doesn't have to be big or fancy, but a little sweet is always nice.
  • Looks like you just need a protein.  Is there any appetizer you can serve that is a protein?  if not a salad with chicken should do as another poster rec
