I am considering making a few dz cheese enchiladas for a party on Sat. Am I dumb or crazy (vs having them catered)

I always make these and they're so good. They might not qualify as easy but I can make them so that means they're not hard either!

I've made this recipe a bazillion times, a little twist on the traditional recipe. buy frozen brown rice from TJs and it makes it super easy. I've made it with both red and green enchilada sauce, both ways are good. and you can add chicken or shrimp if you feel like it, I usually add frozen corn, too.
