DH's rotary club is having a meeting tomorrow night and it's pot luck. I have never been to a pot luck an have NO idea what to make for him. I'm not going because I'm working. TIA.

Well for something easy that everyone always loves you can make any kind of dessert - cookies, brownies, etc. Brownies are pretty easy because you just mix 'em up, bake them, and take them in the same pan if you want.
Something else that is relatively cheap & easy it to make a big pan of enchiladas, or even a lasagna, really any kind of yummy casserole.
I almost always bring dessert unless asked to bring something more specific.
Otherwise there are always the other trusty stand-by's: deviled eggs, finger sandwiches, salads (green, potato, fruit, etc.), mini hors d'oeuvres.
I don't know how much you really want to do.

It's best to use fresh fruit powder on the apples so they don't go brown, and to use green apples.
