There are holes and dips and bumps all over my new yard.
There's also spots where the tree leaf coverage is so thick that grass doesn't grow.
Is there anything short of a full blown major project to fix all this, or am I stuck with it?

DO NOT roll your yard--you'll compact the soil, and that makes it harder for trees, grass, and other plants to grow.
It's better for your trees not to have grass growing up to the trunk--turf sucks up a bunch of water, depriving the tree. You can always make a shade garden under the trees.
