I keep seeing that people keep their food scraps in a container inside and when full, they bring it outside to the compost. How do you prevent it from getting moldy? Does it matter if it does get moldy? Can it still go in the compost bin?

Before I got a compost pail I put my scraps in the freezer.
I use a pail now and it doesn't get moldy because it fills up fast!
We have this compost crock from Gardener's Supply and we love it. If you put all your ktichen scraps in there it fills up really quickly. We probably take ours out every other day or so. The nicer scraps like extra pepper pieces, the layer of onion under the skin, and the center of overgrown garlic cloves go in the freezer to be made into stock, and the rest gets composted. Onion tops and bottoms, pepper stems, celery and carrot tops and peels, lettuce ribs, and anything that's past it's prime. I think the scraps in the crock got moldy one time b/c I forgot they were in there, but we composted them anyway. Our crock has a filter built into the lid, so there's no smell even if you do forget about it.
