meat-free Monday

We usually eat vegetarian a couple nights a week, but recently I started committing to meat-free Monday, because its easy to remember.

Tonight, i tried a new recipe - http://www.wholefoodsmarket.com/recipes/2640 (but I just used regular brown rice) and it was really good. 

If you are doing meat-free Monday, what did you make tonight?

  • We usually do Meatless Monday (see blog for meal ideas) but today was not--I had some chicken to use up so we'll do meatless tomorrow.

     

  • I do meat-free a couple of nights a week (DH usually adds canned chicken . . . it's a running joke.) Not usually Mondays though. Tonight we had venison tacos.
  • Tonight it was roasted butternut squash soup and homebaked bread. Other days it is veggie chili, a curry, a risotto, veggie burgers... we only have meat once a month or so.

    Looks good!  I'll have to try that with some chickpeas or something (can't have dairy).  Thanks for sharing!

     I am meat-free everyday, but as far as what we had last night it was some leftover take-out from a Thai restaurant.  Not the healthiest thing, but not bad.

    I was also thinking that would be good with chickpeas!  We're meat free everyday as well.  We did spaghetti with "meat" sauce, garlic bread, and  salad.  We brown a package of tempeh in the cast iron, break it up into small pieces, and heat it in a saucepan with jarred pasta sauce.  Tastes just like meat sphaghetti sauce with just as much protein.  I'm eating the leftovers right now. Yummy!
