freezing meals??

I promise that I tried googling this before bugging you guys =P...

I'm going to visit my cousin for a week since she just had her baby boy and I really want to be super helpful. I was thinking about leaving her frozen meals before I leave so that she doesnt have to do cooking for a while once i'm gone. However, I have never frozen a meal in my life and I feel so stoo0opid. I've read several articles (including Martha's) on how to do it, but I guess I need an idiot-proof play by play. Do you guys use tupperwear? if so what brand??

What can be frozen? what can't?

I'm probably asking alot of questions here, so if you guys have a site that has helped, I'd greatly appreciate any direction.

Re: freezing meals??

  • I don't have any suggestions. But if the nesties can't give you an answer maybe you can try posting this on the What's Cooking board. I think they would probably know the answer.
  • Things I have cooked and froze are lasagna and soups. I would cook the lasagna in a foil pan, so all they have to do it pop it in the oven.  For soup, after it cools, I put them in gallon freezer bags.  Then just take them out the next day to thaw a little and then put it in a pot and warm it through.

    I usually freeze in either baggies or Tupperware; chili, soups, casseroles, breads, and pasta dishes.

  • Whenever I freeze anything, I usually freeze it in either Tupperware or Freezer Bags...just make sure that everything is properly sealed to avoid freezer burn. I've frozen everything from pasta sauces to soups to premade chicken, etc.  I've never had a problem :)

  • Also, if you are freezing soups or other liquids put a ziplock back in a cup or a pot (depending on your serving size) for freezing and that way it will hold a normal shape.  Once its frozen remove the pot or cup and throw it back in the freezer...

  • I think cheesy pasta dishes are the best to freeze, because they taste just as good reheated.  You can freeze them before you finish cooking them as well.  I have done that plenty of times before with lasagna.  I prepped it and before putting it in the oven, I froze it.  The day I wanted to cook it, I put it in the fridge in the morning to thaw.  That night all I had to do was pop it in the oven. 

    I think the best dishes to freeze are: 

    - pasta dishes

    - casseroles

    - soups

    - beans

    Basically anything soupy/cheesy/casserole like consistency usually reheats well.  I wouldn't recommend things like grilled chicken and veggies or anything else like that. 

    As far as what to freeze it in, I typically use corningware (so it can just be popped in the oven) or a ziplock bag.

  • Amida, that is so sweet of you. Anything you make will be appreciated. DH and I usually make and freeze lasagna and chili. We put them in single or two serving Glad tupperware containers so that it's easy to pull them out, thaw in fridge and heat in the microwave.

  • Ditto pp. I freeze mostly soups, pasta dishes, or casseroles. I also freeze bread, cakes, cookies and frosting.
