Anyone have a great Orzo recipe?

Please no soup recipes, I end up messing them up, lol.

  • There is a recipe on the nest's homepage for Parmesan Rice Pilaf.  I'm wondering if you can substitute the orzo for the rice.  You may want to check it out - it looks pretty easy.

  • I've made Orzo risotto before...can't find the exact recipe, but if you google it there are tons.

    I've also made orzo with broccoli and parmesan in a chicken stock...not bad for winging it!

  • I make a super easy orzo pasta salad, that can be eaten warm, cold or at room temp.

    I cook the orzo in chicken stock, instead of water to add more flavor then add in some broccoli (sometimes I steam it, sometimes I leave it raw), red peppers and red onion... or really whatever veggies you like/have on hand. I made it last week w/ spinach because I had some to use up, it's also good w/ cherry tomatoes. Then I make a simple balsamic dressing w/ good olive oil to dress the salad. Put it on when the pasta is warm so it absorbs the flavors. A sprinkle of parm cheese is good on it too.

  • 1) Orzo, spinach, feta, roasted red peppers, olive oil, s&p

    2) Orzo cooked in chicken broth, parm cheese, carmalized onions

    3) Orzo, diced cooked butternut squash, parm cheese, butter, s&p

    4) Orzo, fresh mozz diced (or small balls), roasted cherry tomatoes cut in half, fresh torn basil, balsamic vinagrette

    5) Orzo, pesto, chicken, diced artichoke hearts, kalamata olives and (what else?) parm cheese

  • I just add butter, garlic, and cheese (like 3 cheese or parm).

    Other than that you can add peas, mushrooms, asparagus, etc.
