  • Yay! You will love this biscotti! I think cherries would be good (I've read that dried fruits, like dried cranberries, usually work well). Maybe mixed with some almonds, too. I think this biscotti is really good with chopped nuts (I've done almonds and pecans). I usually just put them on the top of the loaves before I stick them in the oven, rather than mixing them into the dough, but you could do it either way.

     Another really good variation that I did on Easter: beat an egg, brush the egg on the top of the loaves before baking and sprinkle a mixture of cinnamon and sugar on top (I did 1/4 cup sugar and 1 teaspoon ground cinnamon). I think that's been my favorite so far.

    I've also done chocolate chips, but I think it would be better with melted chocolate drizzled on them instead.

    Actually, white chocolate drizzled on biscotti that has cherries and almonds in it would probably be amazing.

  • Oh I love the idea of cinnamon and sugar!  I will def. let you know how they turn out, I'm so excited b/c I've never made biscotti before (what a bad italianEmbarrassed) !

    Are you going to the baking day GTG?  I really want to have a cookie swap!  I usually only get to go them around x-mas, but they should totally be held year-round.

  • Yes, I'm definitely going to the baking day! I'd love to do a cookie swap, too. I do them at Christmas, too (which is the one time of year that we really DON'T need extra cookies, haha).
