I bought a potted basil plant at the grocery store last Sunday. I watered it during the week because the soil was dry. By Thursday it was brown and crunchy! So I bought another plant today at the store. Super healthy looking and full. Got home from the store at 6pm, took it outside and set it in the sun (about 60 degrees out). I just went out to pick some for pizza and it is completely wilted... in less than 2 hours! What the heck is going on!? I brought it inside and read online it might be a temperature change "shock" reaction, but I don't 100% believe that because it is not cold out per se. Any advice?

Basil needs a lot of water. A ton. More than any other plant that I have ever seen. Even with good daily watering, it will be slightly wilted by evening. Absolutely do not let it dry out. I don't think it is possible to over water it, unless it is sitting in a pool. Back it out of the sun until it adjusts to the light. Good luck!
