I hate packing lunches!!!
So I am doing a stretch of evenings which means the Mr. will be cooking for himself at supper and there is rarely any left overs for me to bring to work the next day. I am getting pretty tired of frozen WW dinners. What do you guys bring for lunch?
Re: I hate packing lunches!!!
I always bring leftovers so that's not very helpful.
BUT... When I was in school, I'd always make a big bean/veggie/pasta salad of some sort on the weekend and eat the same salad every day with a sandwich and a piece of fruit. It was a little boring but it worked. I had about five salads I rotated through.

Potato salad, coleslaw, deviled eggs, u can make a bunch and eat it over a few days
Sandwich, potato chips and dip, pudding
fruit salad
My DH usually brings himself a yogurt and the night before, slices up strawberries and drizzles them with sugar. By the morning, it's like a sugary glaze and he puts them in his yogurt. He also makes himself pasta salad with the olives and italian dressing and stuff

This is the question for me - I brown bag it every single day.
I do have a lot of frozen dinners and left overs too. Some frozen dinners are better than others. I really like those Lean Cuisine foldover sandwiches, Healthy Choice "steamers" (because the portions seem bigger to me), and basically any kind of pasta dish. It's hard to mess up pasta in a frozen dinner, but it's apparently super easy to mess up meat. Some of those meats look iffy. There are a few other things I love to bring though...
First, salad. It takes a while to pack (if you like a lot of stuff in your salad like I do... cheese, carrots, cauliflower, broccoli, ham chunks sometimes) but it's really delicious. It may be obvious, but be sure to bring dressing separate in a baggie or something to put on when it's ready to eat.
I love veggies and dip. Veggies in a baggie and dip in a little tupperware... super easy.
Another fave... a basic ham sandwich.
Easy to make and easy to bring. I like them best with non-cold bread, so I make my sandwich the night before between 2 pieces of cheese and put that in a baggie in the fridge. Then I bring 2 pieces of bread separately. That way, the bread is still fresh. And, extra cheese!
Add on a side of chips or Triscuits or something and it's delish.
This time of year, my favorite dessert is strawberries. Cut them up the night before, take them out right when you start lunch and put some sugar on them... the sugar helps develop their juices as they warm up. I usually let mine sit for about 30 minutes before eating them.
Finally, DH and I always have "sides" on hand... Jell-o cups... 100 calorie packs of chips, cookies, etc... applesauce cups... string cheese. Just that "something extra" to put in with your frozen dinner. Because, let's be honest, those frozen dinners are NEVER enough.
Sorry that was so long... I guess I'm passionate about my sack lunches! HA!
I like toasted wheat bagel thins with egg, cheese, and pepper. I usually eat that with an apple a couple times a week for lunch. There are also regular and everything bagel thins. There's a bread called "health nut" that's really good for sandwiches too. It's got pieces of nuts in whole wheat bread.
