Make your own sour cream?

I am reading In Defense of Food and getting more and more disgusted.  I looked at the organic sour cream in my fridge and it has all sorts of "gums" in it.  Has anyone tried making homemade sour cream? Did it work? Taste ok?

 

Also, has anyone switched from low fat milk to higher fat milk for daily use?  I am contemplating this as well, especially since I don't drink glass-fulls of milk-- I just use it here and there.

  • I never made my own sour cream. But I switched about 11 years ago to full fat milk. I use it exclusively. It's yummier.
  • Yea IDK about sour cream, but I drink 2%...I used to drink whole but I had to stop because I drink too much milk and was consuming WAY too many calories. I drink 2-3 gallons/wk.

  • Yes, I've been using raw milk for about two years now. I have made my own sour cream, but I'm lazy so I tend to buy it. If you'd like to learn more about home dairying a good place to start is www.cheesemaking.com
  • I don't make my own Sour Cream, but I am very conscience to look at the ingredients. Sour Cream should really only have a few ingredients in it like cream and milk.

  • We don't make our own Sour Cream, we don't use it that much.  We do make our own yogurt though, since store-bought also has tons of crap ingredients.  There are lots of homemade cheese making books, like the website above, that probably have sour cream recipes too.

  • I just use plain greek yogurt. You can make your own plain yogurt and strain it.

  • I usually use plain whole milk yogurt instead of sour cream.

    I've heard that its healthier for women to drink whole milk instead of skim, but since my DH is the one who puts the milk on his oatmeal, I still buy skim.

    There's nothing wrong with it.

    Milk easily separates into cream and skim milk. It's not bad to separate them, although I'm sure there is some nutritional value to milk fat.

    I'm sure sour cream is easy to make. Or, if you buy the full-fat version it probably has fewer wacky ingredients. Just know that sour cream isn't simply cream left to sour. You will not want to eat that experiment. 

  • I would love to make sour cream!  I plan on doing a lot more stuff this summer now that I'll have a big enough kitchen to do so.  In terms of higher fat milk, I made the switch to 2% a few years ago.  I used to have a lot of stomach issues when it came to milk and thought I was lactose intolerant.  But none of the "lactose" stuff worked.  When I switched to organic, more whole milk, my stomach was no longer affected.
