Does this sound like enough food?
I'm throwing a 30th birthday for my DH. We have about 60 people coming. The theme is Mexican Stache Bashe and we're having Mexican/Gringo fare. Do you think this is enough food? Do we have enough main dishes?
layered taco dips
spinach dip
fruit & cheese kabobs
veggie tray
grape & strawberry salad
Dorioto salad
chips & salsa
queso & guacamole
DIY taco & nacho station (beef & chix & hard/soft shells)
Spanish rice
Black beans
Chicken fingers
Meatballs
Pierogies
Rigatoni w/ sauce
Dessert: margarita, chocolate, & vanilla cupcakes
Beverages: soda, water, Dos Equis, Margaritas, Tequila Shots
Re: Does this sound like enough food?
Hmm, I think I'd skip the pierogis, pasta, and meatballs. Seem very out of place.
I don't think cupcakes go over super well in large parties - can you do an alternative dessert instead of one or two types? (churros?)
Otherwise, I think the variety is great, as long as there's enough quantity. I also vote for a pinata! Ole!

I like it and think it sounds good.
I agree that the last few entrees are very out of theme, but as the daughter of a woman who doesn't eat Mexican (I know, right?), I know she'd appreciate other food there.

Thinking of doing cosmetic updates to a dated home? These were our costs.
I think it sounds good. I'd also leave out the meatballs, pierogies, and rigatoni.I think just that large taco stationn is fun.
For dessert I think it could be a bit more interesting. I love the margarit cupcakes. But what about doing a Tres Leches cake (or even cupcakes if you're wanting to go down that path). Martha Stewart has a great recipie (I've made it several times)
Thanks for the input gals!
I added the non-Mexican dishes for the members of our picky families that don't eat Mexican food. The cupcakes were requested by my husband. They may be a little boring, but it's his birthday.
Thanks again for all the ideas!
