new recipe

I tried a new one tonight and it was so yummy!! I actually got it from Dr. Oz this morning lol! The main ingredient is cauliflower. I've heard of this substitution before, but always thought it would be gross. Turns out, it tastes nothing like it. Even DH liked it and he is a picky eater and not big on vegetables.

Low cal/low fat fettucine alfredo

1/2 lb cooked whole wheat pasta
1/2 head of cauliflower, cored and broken into small florets
1/2 cup of chicken stock (or water, boullion)
1 cup parmesan
2 T olive oil
3 cloves garlic or shallots or onions or whatever you like, minced


Steam cauliflower until soft (about 20 mins). Heat olive oil in small saucepan and cook garlic/onions,etc. Add chicken stock and cook 5 more mins. Allow to cool slightly.

Put everything in the blender and puree until silky smooth. Pour into saucepan and heat. Add spices to taste (I added salt, pepper, basil). Toss over pasta and serve. It turned out a little rich/thick for me, so I added more water. Yum!

  • I just saw this on Dr. Oz this afternoon!  And, of course I made a mental note to copy down the recipe and totally forgot...oops!  Thanks for the review!  I really want to try this out.  I used to love the South Beach cauliflower "mashed potatoes," and figured it was something similar.
