Sounds good to me.  The only thing I might add is some beer (corona, negro modelo) and sour cream and guac.

Looks good- my only thought was that if someone is a vegetarian, they will their options are the sides and dessert.

Here's what's sad about this menu: it's just for DH and I.  I'm ridiculous, but everyone had plans, and I didn't want to scrap a Cinco de Mayo feast.  I'm cutting the recipes down and/or freezing extras.  The beans and rice are from a batch I made, and froze, a couple of weeks ago.  But, again, I totally admit that I may be a little bit insane.

I'd agree with this, and maybe add some sort of veggie. Although I guess if it's just for the two of you, it's perfect!
