Hi! My DH and I are flying into Orlando and staying on the beach in Daytona a few weeks from now for our anniversary.
Does anyone know of anything special we could do, or any great restaurants we shouldn't miss?
We've already done Disney, Universal, and Sea World.

I would highly suggest reading trip advisor to get recommendations for places to see and eat. My friend just started a blog called: http://unknownflorida.blogspot.com/ and she is starting to write about everything do in Florida (that's not just amusement parks). Don't think she has anything on Daytona area yet... but keep watching her blog... she might!
I think I've only been to Daytona twice, so I honestly can't recommend anything; however, if you want to travel down to New Symerna Beach I highly recommend you try the Spanish River Grill... super fancy and delish Spanish food... great anniversary dinner. It's located in a strip mall, and from the looks of the outside you would never think it's as fancy or as good as it appears to be!

Thanks for the advice so far. We are probably going to spend more time in Orlando than I had originally thought. (The only reason we are staying in Daytona is because I got a great deal on beach front accomodations!)
Does anyone know of a nice place for Sunday Brunch? I have checked trip advisor, but I thought ya'll might know better.
Also, I wanted to do the Luau at the Polynesian, but its booked. Any other ideas for a romantic dinner?
