I really can't think of any cold mexican apps that don't involve chips and dip. I usually see a lot of mini quesadillas, taquitos, and tamales.
Yeah, I was thinking of the empanadas when I forwarded the link. They're also okay warm or at room temp if that would help.

Layered Jalapeno Dip
i made a super easy bean & corn salad/salsa over the weekend. you don't really even need measurements. just make to your desired taste.
1 can black beans
frozen corn (i equalled the amount of black beans); thawed in microwave
grape tomatoes, halved
cilantro
lime juice (i used 2 limes)
1 avocado, diced
red onion, diced
We make a similar dip: (from the bottom layer up)
Refried regular or black beans
Sour cream MIXED with a packet of taco seasoning
shredded lettuce
diced tomatoes and onions
shredded cheese
It is ALWAYS a hit.
Ceviche! I can imagine you could even layer it (I heart layering ever since I was gifted my beautiful trifle dish).
Chop fresh fish or shrimp and marinate it in fresh lime juice (I usually add some lemon and some orange juice as well) with S&P. Soak for at least 2 hours.
Chop: tomatoes, onions, cilantro, avocado, cucumber, crab meat (imitation on my budget)
You can layer all the ingredients in any order, taking the fish out of the marinade to layer and then pour the marinade over the entire dish after assembling.
Service with tostadas or tortilla chips.
