Easy Prep Mom's Day Appetizer??
Looking for ideas (and recipe) for an easy Mom's day appetizer, where most of the prep can be done the night before (I have 3 little kids, so most of my cooking has to be done when they are asleep at night).Thanks!

If you like mexican, here is the easiest, no cooking appetizer I know:
1 package cream cheese (I use lowfat)
1 can refried beans (I use fat free)
1 jar of salsa
2 cups shredded cheese
diced tomatoes, onions, black olives, jalepenos.
In a casserole dish (9x11 or so) spread cream cheese on the bottom. Spread the refried beans over it. Top with 1- 1 1/2 cups of salsa. Top with shredded cheese. I bake it at 375 degrees until bubbling/melted (about 30-40 minutes if it was made ahead and in the refrigerator - cooks quicker if you just put it together and bake it right away without refrigerating it).
When it comes out of the oven, top with olives, jalepenos, tomatoes, onions (whatever you like) and serve with tortilla chips.

I add in a can of diced artichokes - make it ahead of time (sometimes the day before - and put it in the fridge) and reheat it in the microwave. It is very good!!! I have even frozen leftovers for another time.
People go gaga for this artichoke dip & it is the easiest thing ever
1 block cream cheese
1/2 cup & 2 tbsp Parmesan cheese
1 12 oz can drained artichoke hearts
Blend all ingredients together, put in baking dish & top with the 2 tbsp of remaining cheese. Bake at 250 for about 35-40 minutes (until it bubbles). Allow to cool for 10 minutes before digging in. Serve with crackers.
I always make this the night before a party and then just throw it in the oven.
