So the Betty Crocker email this week talked about Margarita Shrimp. I have 2 bags of shrimp sitting in my freezer that I am dying to use up. The email suggested taking frozen margaritia mix, thawing and using for the "marinade".
I only wished margarita mix wasn't so sugary. DH & I are on a diet and we have to have as minimal an amount of sugar. Basically protein & veggies all the way for meals, plus some other stuff. I've gone semi-vegetarian the last 3 days (by accident). Today is tuna salad (with hardbolied white eggs for more protein, sans mayo), yesterday I had a black bean & bell pepper "fiesta" mix with guacamole for Cinco De Mayo, and Tuesday I had a veggie lasagna and salad. Food has been good-- I can't eat crappy stuff, cause I could potentially "starve" the rest of the day until the next meal. Boo! But I have about 10-15 more lbs to go DH has lost about 25. Go him!
