  • For real, things have been dead here lately.

    I didn't bring anything for lunch and ended up scavenging some stuffed shells left over from a meeting last night - score!

  • Nothing particularly exciting here.  Just an Amy's Indian Spinach Tofu Wrap.  Maybe I'll munch on some apple rings later.
  • Yes, the boards haven't been all that lively in recent weeks.

    I made the world's best chili and mashed potatoes for dinner last night, so I am eating leftovers.  It might sound weird- but it's awesome.  I make my chili with ground turkey instead of beef, so it's not greasy at all, and it's the perfect texture!

  • I had a spinach salad with tomatoes and chickpeas that wasn't so appetizing once I started eating. So I ate 2 pieces of string cheese and a handful of goldfish crackers instead.

    I'm either heating up veggie pot pie or chicken fettuccine alfredo for dinner so I might as well have eaten light!

  • I had a cobb salad for lunch, it was pretty good.  We're having cabbage rolls for dinner, so I didn't want to go overboard.

  • I'm a little late to this post. I had quinoa salad with turkey cutlets. It was actually really good!

     

    The posts on here have been few and far between. I know i've been MIA. Work is nuts right now and I have no free time!

    They're (boiled) cabbage leaves filled with ground beef and rice and tomato sauce.  I never used to like them, but do now.  DH loves them, they're definitely a "comfort food".

    Some of my family calls them "Hungarian Pigs in a Blanket".

    I've been on a quinoa kick lately!  Self magazine had some delicious recipes a couple months ago that I keep reusing, it was the first time I'd ever made quinoa but now I'm hooked!
