This is our first year growing edibles and we're learning a ton. Our cilantro was doing great, big and bushy and unfortunately I neglected harvesting. I understand that it has a rather short growing cycle once the heat really kicks in, and lately we've been having days around 85.
So a few days ago the leaves on a good portion started to look different - they went from bushy bright green to a darker, tighter looking leaf. I assume this means it's moving into the final cycle and will soon seed. Is it still okay to use, or has it past its prime for culinary use (or for feeding the bunnies)? There's still a good bit of growth that's looking fresh and bushy, would the fact that part of the plant has changed alter the flavor of the whole plant, or can we still cut the fresher stuff underneath to eat?
We're planning on collecting seeds so we can start rotating planting to keep a good supply going, but we started with just one, so I'm trying to not screw this one up!
