Question about cilantro

This is our first year growing edibles and we're learning a ton. Our cilantro was doing great, big and bushy and unfortunately I neglected harvesting. I understand that it has a rather short growing cycle once the heat really kicks in, and lately we've been having days around 85.

So a few days ago the leaves on a good portion started to look different - they went from bushy bright green to a darker, tighter looking leaf. I assume this means it's moving into the final cycle and will soon seed. Is it still okay to use, or has it past its prime for culinary use (or for feeding the bunnies)? There's still a good bit of growth that's looking fresh and bushy, would the fact that part of the plant has changed alter the flavor of the whole plant, or can we still cut the fresher stuff underneath to eat?

We're planning on collecting seeds so we can start rotating planting to keep a good supply going, but we started with just one, so I'm trying to not screw this one up!

Re: Question about cilantro

  • The younger stuff will taste better, but the older stuff isn't toxic or anything.  It may just be a bit more bitter/tough once it bolts.
  • Cilantro is edible at all stages. You and your bunnies can eat it happily, but be warned it will be dry and have a slightly altered flavor.
  • Thank for the info. Good to know I haven't completely missed the chance to take advantage of this plant. We'll harvest the more tender leaves and see how the bunnies feel about some of the others, then I guess we're just waiting for seeds.

  • Cilantro seeds are Corriander..... My cilantro bolts as soon as it gets hot, but it self seeds. i don't even save the seeds. I have it growing in my grass, the front of my house etc... it is everywhere.
