breakfast for 35..

I have to make a breakfast for 35 people. Where I am serving, there will not be a place to heat up food (so egg bakes, ect will not work). There will be an outlet for me to use. It is at a hotel, and they are supplying the beverages for me.. all I have to concentrate on is the food.

So far I am thinking:

homemade applesauce (considering having warm, in crock pot)

bagels w/ cream cheese, jams

variety of muffins (so far: Rhubarb, Chocolate Chip)

What else can I make to round out the selection? I do have a large nesco roaster that I could make something in, if you have any ideas for that. Also, any yummy muffin recipes you can recommend? Thanks!! :)

  • I would add  croissants, coffee cakes & some fresh fruit.
  • Turkey, cheese, maybe a panini press and/or toaster that you can plug in so people can make warm bagel sandwiches.

    I agree with PP on fresh fruit.

  • Applesauce sounds weird for some reason.  I'd add yogurts with some granola and like pps said fruit.

    Maybe it's a regional thing? Applesauce it very common in a breakfast spread here.. as is cottage cheese (which I think is wierd)

  • Out of curiousity, what area of Wisconsin are you from?  I grew up in the Milwaukee area and have never seen applesauce on the breakfast menu unless it was being put on potato pancakes or in crepes. 

    I will second the cottage cheese, though. :)  Very common.

  • If you are going to have bagels you should consider having smoked salmon and capers. 

     

    To me nothing says brunch better than bagel and lox

  • I'd use the outlet for a crock of oatmeal and do various toppings.  And you can do bacon, as it doesn't need to stay hot. 

    Maybe a toaster, too?

    Small boxes of cereal and some milk?

  • North Central WI.. See it all the time up here :) Not always a menu item, but always a breakfast buffet item.
