How old are your kids? I usually pick up OC Family magazine, they have tons of ideas. Here is the web link also

I don't have kids, but twice a year DH and I take my sister's three little ones (7,6,4) for a week at a time and take them all over OC. Here are some fun places (Other than Disneyland, Knotts, Sea World, Legoland...):
Whale Watching in Newport Beach (can be inexpensive if you spend some time online getting good deals. We did it for $15 per person)
Irvine Park and Irvine Park Railroad: Especially cute around Christmas time, there's not just a little railroad with a train to ride, there's paddle boats and a gorgeous park to play in and ponies to ride
Thursday Nights at Aquarium of the Pacific - I don't know if they still do this, but two years ago, the aquarium had free Thursday (or maybe Tuesday...) nights where guests could explore their shark tanks (smaller sharks, nothing huge) and there is a live band, touch tanks and a little park to play in. Very cute!
Montage Resort Beach in Laguna: The beach is open to the public and GORGEOUS (my favorite mainland beach in the USA, I think) and has tide pools that the kids really enjoyed. There are starfish, anemones, fish, etc...
Discovery Science Center in Tustin/Santa Ana: I've only been once, but the exhibit we saw had TONS to see and touch and do. Cooler for kids who are a little older...(10 yr olds, ideally)
Splash pads: all over OC there are parks with water features. I know there are at least 3 in Fullerton/North OC. They're free, fun, and great for the summer!
