Canning Question

If wanting to do both low and high acid foods do you need a water and a pressure canner?  or can a pressure canner do both? I know that you can't use the water bath method for veggies, but I'm wondering if a pressure canner can do it all...

    I much prefer veggies frozen, though.

    I use my pressure canner for both.  However, it's just barely deep enough.  You need a rack + whatever jar size you want to use (up to large jars if you think you'll use them) + 1-2 inches of water for a water bath.  That almost overflows my pressure canner with the pint jars (and does overflow when boiling), so I got a wire rack that allowed the jars to sit lower than the metal plate-like rack that came with the canner.

  • I believe you can do both in a pressure canner.  Like PP said though, I prefer my veggies frozen so we just have a water-bath canner.
