Girls Night

One of my best friends is in town this week so I am having my besties over for dinner.  I'm the one that always hosts dinner because I love entertaining and I'm "the cook" of the group so I'm trying to think of something new to make.  My specialties are usually Mexican, so I'm trying to stay away from that.  Also, they're all eating healthy these days so I need to factor that in.

 Suggestions for new dinner recipes for a girls night that is healthy and not Mexican.

  • I'm not sure how fancy you typically like to go, but I love making stir-fry with tofu.  I usually press and then marinate the tofu for a little while in some sort of soy sauce/sesame oil/rice wine vinegar concoction.  I have baked tofu before (very yummy) or I may also just fry it in a little bit of oil.  I'll serve it over brown rice with a big leafy veggie like bok choy and some sugar snap peas or broccoli (stir fry those with some garlic and the same marinade as the tofu).  That is usually fairly healthy and pretty quick as well.
  • I first tried this Italian stuffed chicken when I was in Phase 1 of the South Beach Diet.  It was so delicious, even my husband loved it.  I made it again for the family on Mother's Day and now they all think I'm such a great cook Smile  It's definitely something I plan on making again for a get together.

  • What about baked or grilled tilapia with a great marinade, citrus rice, and steamed asparagus? For starters, you could do bruschetta, boiled shrimp and a great salad. Serve a light fruit tart for dessert.
  • All great ideas... I'm nervous about tufu but I will try it one day when I'm by myself.  I'll let you know what I decide.  Thanks ladies!
