Hosting a potluck - make sides JIC?

I'm hosting my new classmates (~15) for dinner on Saturday night.  I told everyone to bring a side or a dessert and whatever special they wanted to drink.  I'll do grilled chicken and beef, cheese and crackers, chips and salsa and basic alcohol.

Would you make sides and desserts just in case?  What would you make?

  • Hi!  How are you?  I'm glad you decided to host this... 

    Whenever I have guests bring things - it seems like they always bring lots of dessert.   You probably don't need to make any extra desserts...    if you're worried no one will bring a healthy item - perhaps make a salad with no dressing or cole slaw (or cucumber salad) - and if you have left overs - can eat the next day.

    If you're really worried no one will bring dessert - perhaps Girl Scout Cookies or Ice Cream Bars?  I don't really bake well - so I keep stuff like this in the freezer for when people come over last minute. Anyways - Good Luck!

  • I'd probably recommend making at least one extra side or have another appetizer or side that can easily be thrown together at the last minute in case you end up with too little (i.e. frozen appetizers, a green salad, etc). 

    Usually if I make an extra dessert, I'll make something that can be frozen in case I don't serve them or in case of leftovers. But I do agree, people tend to bring lots of desserts.

  • I'd probably have a couple of cans of baked beans I could throw in if necessary and some ice cream sanwiches.  They have some mini ones now that would be perfect for a JIC dessert.
  • I always have extra just in case - even if they're frozen cream puffs from Target or Sam's.

  • I would actually call them to find out what they plan on bringing.  It's not rude and it's a nice way for you to have a good idea of what's coming so you can make up for what's needed!
  • I would make a side dish.  There is nothing worse than not having enough!  I would prolly do a fruit salad or watermelon that could double for dessert if needed. In addition, I would have a few cans of baked beans on hand as 6fsn has already mentioned.

  • Watermelon's a great idea!  I'll have that and some gussied up beans.  Have you tried Bush's Grillin Beans Black Bean Fiesta?  Really, really good.  They're great for a lazy weeknight dinner in tortillas with a little cheese.

    I know one girl's husband is a baker and she said they'd bring something from his bakery, so I know I'll have at least one fabulous dessert.
