DH and I want to put in a 12x19 patio in our backyard. We like the look of pavers, but also don't mind the look of stained/stamped concrete. Anyone have experience with either? Wondering how hard this project is going to be...

Pavers, because they are permeable. And you can move them. You can change the shape of your patio or expand it easily.
Dark colors will get hotter. And stamped concrete doesn't last as long. The color can fade, and the pattern can chip off. I'd choose pavers anytime over stamped concrete.
Pavers have a higher resale value and on the whole look better IMHO. The key to pavers is the underlayment and edging. If those two things are done right they are the best choice by far.
Where I live permeable pavers are a nice idea but not practical (every winter they pop up/shift from the many freeze-thaw cycles) but in your area they would be a great choice. Normally you have to be careful to put plants that can handle a lot of rain around patios but if their permeable that's no problem! FYI not all pavers are considered permable. Make sure to get ones that have the ridges on each side those are the true permable ones. And get the right joint filler too (no polymeric sand).
