  • Oh, hi!  I just got back here to read the responses and saw that a couple people were wondering how it went!

    Well, let's just say it's a good thing I filled in the food :)  We would have been eating Ruffles otherwise! Lol

    When the guests told me they were thinking chips, I scratched the steak off my menu and replaced it with brats lol  That was a good move.

    Here's what I ended up serving:

    Crackers & dip

    Chips & salsa

    Grilled chicken - I make this all summer long and people always ask me for the recipe - I love how easy it is

    Brats - just cut in half and served like sausage, not served like hot dogs

    Salad - same recipe from 2 weeks prior - greens, dried cranberries, honey roasted sliced almonds, gorgonzola, rasp vinaigrette

    Vidalia-Corn Casserole - recommended by a nestie - I felt like it needed a goodly amount of pepper and some more salt, but there wasn't any left in the pan and that's always a good sign

    Twice baked potatoes - brought by a girl from Idaho - ha!

    Fruit salad dressed with sweetened condensed milk and cinnamon (quite tasty, brought by someone)

    And then people brought a cake and a cheesecake.

    The chip thing was obviously a regional mix-up with students new to the south not knowing how we do things here ;)

    Would I do it again?  Of course :)  I love doing this.  I do have to say that I'm waiting on quite a few reciprocal invitations now! lol  I've hosted 14 couples/people and now it's their turn :P

  • Oh Good!  I'm glad it went well.  Am just back from the "shore" - otherwise I would have written back earlier.

    BTW - I LOVED the basil corn salad you posted for your last get-together and have saved the chicken and corn bake recipe as well. 

     I agree though - it is def' your turn to be in "guest" mode.
