We have the original Iphone and are due for an upgrade, so we are getting the new "4" version.

Does anyone know if/how we can sell our old iphones.  Well, I guess my actual question is, can we "clear out" our info on our old phones completely if we do try to sell them?

It's a bit tech heavy and requires jail breaking, but if you follow the directions it should be fine.

That option may not erase all of the data completely (in the same way that even when you empty the recycle bin on your computer the files still exists in one way on your HD)

It certainly is possible, but kind of paranoid considering it would take a significant amount of effort. The OP should probably just stick with the easy non jailbreak way to keep things simple.
