So after reading yesterday's posts about the Starbucks Pumpkin Spice Latte, I found myself having a little bit of extra time before work this morning and stopped at the drive thru.
I got the decaf pumpkin spice latte and it was sooooooooo good! I think you have contributed to a new obsession of mine. Now I'm just going to have to find out how many carbs are in it before I go crazy with them and end up having to go on insulin b/c my sugar levels are too high!
And now to find a low carb recipe for pumpkin bread!!

They have so many sugar free syrups there (made with Splenda)...I don't see why they haven't made the pumpkin one sugar free yet. Boo!
I quit drinking them when I found out all that... and that is with NONFAT milk. I moved on to their "skinney" lattes that are like 90 calories but they aren't the same.

Here is a low calorie version!! I hope this helps!
(Entire Recipe: 79 calories, 1.5g fat, 127mg sodium, 10g carbs, 1.5g fiber, 6g sugar, 6g protein)
Ingredients:
7 ounces light vanilla soymilk
2 tbsp canned pure pumpkin
? tsp cornstarch
? tsp pumpkin pie spice
? tsp vanilla extract
Splenda, to taste
Directions:
Combine all ingredients, except the sweetener, in a small pot. Stir well. Bring to a boil, stirring constantly.
Once mixture begins to froth, continue to boil for 1minute. Remove from heat and pour into a mug. Allow to cool slightly. Sweeten to taste and enjoy!

I've never had soy milk before. Does it taste much different from whole or skim milk?
I've never actually had soy milk before, but I have had stuff with soy in it and to me it is gross. It leaves some kind of weird film in my mouth. Blech. I know a lot of people love it, though.
