In a previous post, someone mentioned that I should add gourmet pbj sandwiches to my lunch menu for a baby shower. I think it's a great idea, but I don't know how to make them. This may sound dumb, but I don't like normal pbj sandwiches. What differentiates gourmet pbj sandwiches from regular ones?

Not to be snide, but there's really nothing gourmet about those. They're just presented differently.
I wouldn't think a pbj could be "gourmet"... but I guess it really just depends on the ingredients... rather than a simple smuckers jelly, use some tasty preserves, something with chunks of fruit in the jam... try making your own peanut butter?
As for the "sushi" ... may not be "gourmet" but they are pretty darn cute!
I agree with this. Whole Foods has a make-your-own peanut butter machine. It's really yummy. You could do that with a great jam on yummy wheat bread. I know we have a local place that makes a seeded wheat that makes great pb&j.
I didn't read the other thread, but a favorite of mine for a shower is mini blt sandwiches. I make a sun-dried tomato mayo and spread on two pieces of rye bread, then top with sliced roma tomato, crumbled thick cut bacon and baby arugula and season with a bit of salt and pepper. Cut into four triangles. It's so good! It helps if you don't cut the tomato when cutting into four because the juice makes them soggy, so if you can make one slice fit each sandwich that works best. You can also use a cookie cutter to cut it into a cute shape.
To make the sun-dried mayo, make homemade mayo and then chopped sun-dried tomatoes that were packed in oil, salt, pepper and a little bit of cayenne or tabasco. You can also add all that to already prepared, good quality mayo.
Great bread, all natural peanut butter, and any combination of the below:
homemade jam (all fruit), Nutella, fresh strawberries, bananas, apples, marshmallow fluff, chocolate covered potato chips, and, (as a joke) for the mom-to-be, pickles.
