My daughter's dedication is on a Sunday and it begins at 11 am with lunch following immediately after 11:30. It will be at a park. I am doing a vintage theme.
My menu consists of the following:
Carolina Style BBQ
Chicken (fried or grilled?)
Layered Salad (not sure which type yet)
Green Beans and Potatoes
Mac & Cheese
Corn Bread/Rolls
Desserts: Buttercream Cake and Sundae Bar
Am I missing anything? Please critique. Thanks!

I think that looks fine. I'd go with grilled chicken to keep it lighter.
Be sure to have plenty of drink choices since you'll be outside.

What do you mean by green beans and potatoes? Is that a dish where they're put together? Because I would say you've got starches covered with mac & cheese, so maybe you only need either mac & cheese or potatoes if there isn't a large crowd coming.
Personally, I'd skip the ice cream. The logistics of that 1) in the middle of summer 2) in a public park 3) without wash stations...ugh, forget that. Especially since you'll be all dressed up from church - sticky fingers and choc syrup and melting ice cream plus 90 degree heat plus dry clean only just don't do it for me. If you just have to have ice cream, maybe do those self-contained old fashioned wax paper cups that come with the wooden spoon.

Also, whenever I have BBQ style events, I always include a pasta salad. In case there is someone who doesn't eat meat- they can get a bit more full than just eating green salad. And it's a great side for those who do eat the meat. But you know your guests better than I do! GL.
