My parents will be visiting this weekend. More often than not, whenever we have guests for the weekend, I have available either sandwich fixings and/or pasta (Kasta!) salad for lunches.
I'm bored of serving those options to guests. Do you have any other ideas?
I'm looking for something that's quick and easy. Bonus points if it's something that I can fix in advance.

Or you could make your own pizza. Or even veggie pizza.
Maybe like pulled pork in the crockpot for sandwiches?
Spanakopita would be a nice lunch option (phyllo dough and spinach/feta mixture). I'll have to get you the recipe tomorrow.
There was a Greek chicken pasta salad I had at a shower recently and it was delicious (chicken, orzo pasta, asparagus, cucumber, feta, fresh parsley and a lemon/olive oil dressing). I think I have the recipe for that too in my Greek cookbook. I'm pretty sure that can be made in advance.
Chili or some sort of soup in a big pot to serve and heat individually
Soup is a good idea. Most of those can be done in a crockpot. I have done chicken noodle, beef & barley, and chili. Cornbread is super easy to whip up to serve with chili and tastes so good when homemade.
Lasagna is something that can be made ahead.
I second pulled pork in the crockpot. We had pulled pork at a party the other day and I brought this bean salad which was a hit- it is basically just opening canned beans and mixing so very easy and you prepare it in advance.
