friends coming over for dinner after work...
need ideas for dinner. Nothing too difficult. We have 15 month olds also. I'm thinking Annie's Mac and Cheese for the kids but don't have a great ideas for us adults!

I agree with something you can throw on the grill. Maybe even some seasoned chicken breast with a nice green salad.
Do you live near a Costco? Sometimes they have pasta dishes back in the meat department that you can throw in the oven.

I like the idea of kabobs. You can make them the night before, throw some marinade on in the morning, and grill at night. Side of rice and a tossed salad.
You could also do burgers with grilled corn on the cob and grilled potatoes.
This grilled chicken is wonderful and easy. I made it weekly last summer just for us for dinner and I use it all the time as my default chicken recipe and people always ask for the recipe. You can put it together the night before so all you have to do that night is put it on the grill.
Maybe some fresh watermelon, corn on the cob (it's ready here, maybe not in NH yet) and a tossed salad.

I vote something easy like fajitas from the crock pot with chips, salsa, and margaritas. That way, your friends can literally come over and eat soon after work. Try this combo (a cinco de mayo combination, but still summery):
