Recipe Thread

Can we sticky this one and maybe the crockpot thread so they are easily accessible?  (Who do we ask to do this, have we gotten a board mod yet?)

I saw the lasanga recipe post and thought maybe we should get a sticky-noted post to share recipes?

One of my never-fail last minute, almost ALWAYS have the ingredients for is:

Tuna Casserole

1lb. noodles (elbow macaroni, rotini, etc. I use whole wheat noodles of some kind.)
1-1/2 Cups grated cheese
2 small cans tuna
1 Cup green peas
1 small can cream of mushroom soup
1 Cup milk
salt & pepper to taste

Preheat oven to 400*.  Boil the noodles, drain & rinse.  Grate the cheese.  Add all ingredients into a casserole dish, put in oven for 20 minutes. 

One alternate:  you can take 1/2 of the cheese & mix it in, then save the other 1/2 to sprinkle over the top before you bake it.  Either way, pretty much the same.  Doing the alternate just keeps the noodles on the top from getting crispy.

Makes about 10 servings (my family of 5--all boys and me--eats the entire pot of it, just to give you an idea.  It makes a lot.)

  • Oh, boy!  I can have fun with this thread!  One of my go-to's when I'm too lazy to make a batch of lasagna is my casserole that we call Glop.  Makes a whole crap ton and we usually have leftovers for days (it's awesome as a leftover)

    (for 4 people)

    2 boxes of pasta (typically use elbows but you can use ziti, penne, ect)

    2 jars of Ragu Super chunky mushroom sauce (the really big jars)

    1.5 lbs of hamburger

    Huge bag of mozzerella cheese

     

    Preheat the oven to 350F

    Cook pasta using directions on box, drain.

    Brown the hamburger meat, drain off oils, add sauce and cook to simmer.

    In a huge pot, combine pasta, meat sauce, and pretty much the whole bag of cheese (I like it suuuuuuper cheesy)

    Bake in oven for 25-30 minutes, just until cheese is melted.

    Serve with bread of your choice.

     

    It's super easy and doesn't take a lot of skill.

  • Great idea! I have a meatball recipe I was going to post last night and forgot to. I know the ingredients, but I can't remember the amount of each one so I'll have to look when I get home. I'll post it this evening though!

  • This is a fave in my house. It's yummy and easy. The hardest part, by far, is waiting the 45 minutes that it's in the oven!

     

    Campbells Cheesy Chicken & Rice Casserole

    50 min | 5 min prep

    SERVES 4 -6

        * 1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
        * 1 1/3 cups water
        * 3/4 cup uncooked long-grain white rice
        * 2 cups frozen mixed vegetables
        * 1/2 teaspoon onion powder
        * 4 boneless skinless chicken breast halves
        * 1/2 cup shredded cheddar cheese

       1. Stir the soup, water, rice, vegetables and onion powder in a 12" x 8" shallow baking dish.
       2. Top with chicken. Season chicken as desired. Cover.
       3. Bake at 375 degrees for 45 minute or until done. Top with cheese.

    Mini Pizzas

    3 English muffins
    1/2 Can tomato sauce
    1 Tbsp oregano
    1 Tbsp basil
    1/2 Tbsp garlic salt
    1 Cup grated cheese
    pizza toppings (whatever your tastes are)

    Preheat oven to 350*F.  Cut english muffins in half, lay inside-up on cookie sheet (You'll be making six mini pizzas).  Mix tomato sauce, oregano, garlic salt & basil together in a bowl.  Spoon sauce over the top of the english muffins.  Sprinkle cheese over the sauce.  Add your toppings (pepperoni, canadian bacon, veggies, etc.) and sprinkle a tad more cheese over the top.  Bake for 15-20 minutes.  Yum!
