Vegetarian Cookbooks

I am thinking about becoming a vegetarian or at least most days of the week.  My aunt who is a doctor just said to make sure that I am getting protein through other sources (tofu, beans etc). 

I am looking for some wonderful cookbooks to get me started.  I already have some great vegetarian meals that I make on a regular basis but again not enough....

I saw that some of you recommended Deborah Madison's books as well as some by Jack Bishop.  Please help :D

  • I love the Moosewood ones, particularly the Low-Fat one and Sundays @ the Moosewood

  • Second the Moosewood cookbooks, I have like 5!  A Year in a Vegetarian Kitchen is great, it's seasonal, easy veg recipes.  I like Local Flavors by Deborah Madison too, the pictures are gorgeous, but it it's laid out by produce type, not by season (annoying!).  I'm like, "this (say) Kohl-rabi recipe looks interesting, but what season does it grow in?!?" Vegetarian Times magazine is also awesome.  Great easy recipes with lots of flavor, helpful cooking tips, environmental articles, and green product reviews.

    also - it's not vegetarian, but it's a GREAT general cooking primer: The Art of Simple Cooking by Alice Waters. At the very least pick it up from the library and peruse it. She talks about making your own sauces and stocking your pantry. I own it and love it.

  • Yep - Moosewood cookbooks are great. My New Classics Moosewood is all stained and worn! Always a good sign!
