inspire me, ladies - what's for dinner?
I'm writing up our shopping list (we plan a week's worth of dinners at a time) and running short of inspiration - so far all I have is a chicken stir fry and burritos.

I made roast chicken on Sat with lemon-oregano potatoes and oven-roasted veggies (mushrooms, peppers, zucchini).
On Sunday, I made an omlette/frittata thingy with the leftover veggies and goat cheese. Then I picked the leftover chicken off the bones (I hate doing this) and made stock from the carcass.
Monday was a chicken noodle salad with sesame dressing
Tonight was hot and sour soup using some of the chicken stock I made on Sunday, with vermicelli noodles.
Tomorrow's lunch is pasta salad with leftover shredded chicken (I'm probably going to grab something for dinner on the way to my haircut appt in the evening).
There's a health food store/supermarket near me that makes its own sausages in-house. They use hormone/antibiotic free chicken, turkey, pork, etc. I usually keep the freezer stocked with these (they go on sale sometimes and I load up when they do!) and have them with brown rice, steamed broccoli, or chop them up and toss with pasta. They add so much flavour!
Speaking of sausages, I had some really good ones in Sydney and Brisbane, like green coconut curry lamb sausages. DH's friends and rellies (haha) would get them from their local butcher. Do you have a butcher near you?
We do, but we don't have any fancypants sausages at them.
The most adventurous the locals get are garlic and herb flavour, which is a shame because those green curry ones sound delish!
I have been using my slow cooker a lot lately. If you are orginised enough to plan meals, it is amazing. Put everything into it in the morning..... when you get home (our your DH gets home) the house smells amazing and dinner is ready. Voila!
In the last week I have made a simpler version on Jambalaya (I used chicken and sausages but no seafood) over rice. Meatball sliders (meatballs in a marinara type sauce with a g of provolone on a bun), lemon lime chili chicken, spicy kickin' chicken, lasagna and rice stuffed red peppers...... mmmmm, now I am hungry.
I wish I could help - we've been on the take out train lately, and it's getting very expensive!

spinach everything. the cool weather has extended the spinach season in my garden and I can barely keep up - I have enough for 2 households b/c my parents take a bag full every few days too.
sauteed spinach DH said it wasn't disgusting and it's good for us, so I guess that is a
- wonder if he will feel the same way after having it 3 times in a week.
spinach salad with avocado and grapefruit or red onion and strawberries. spinach quiche, spinach and feta stuffed in peppers, spinach with tomato and fresh mozz. etc. etc.
coupled with a main course if needed like chicken breast, chicken sausage, garlic shrimp skewers.
Ooooh can I get a recipe for this? I love Jambalaya.
It is Emril Lagasses Cajun Jambalaya. The Cajun seasoning is soooooo good. Here are the ingredients to make the seasoning. This makes enough for like 10 Jambalayas (I put it in my Chili too, it is so good
