f/u bulk chicken purchase

We got our chx's last night!  They came in wholes or halves, so we got 4-wholes for baking/ rotisserie, and the rest halves.  We kept some halves as-is for grilling (going to grill one tonight!) and cut the rest up.  DH ended up doing the dirty work, luckily :) It really wasn't too bad especially with them already being halved, I could have done it but was happy that he was willing to.    There is definitely a learning curve; the breast and thighs of the first half are in more pieces than we would prefer but by the 2nd/ 3rd he had it down.  He kind of just went at it, w/tips on deboning from an allrecipes.com guide.  As for tips, I would say take your time removing the breast/thighs from the bones to get all the meat...as long as you do that it should come out fine.  Also for cutting off the wings, if it's not relatively easy, move the knife over a bit to find the joint; it should be pretty easy once you find the right spot.  I froze the bones for making stock at a later time...too much going on this weekend to be locked in the kitchen. And to the birds...they are free range (DH said they had a really nice setup), heritage breed birds, no hormones, and grass/insect fed (they just roam and eat grass and bugs like chickens are supposed to), supplemented by Non-GMO feed when needed- Yay!!  He said the couple at the farm were great and they were chatting for a while - I'll have to go w/him next time.   They do pork too and gave us a carton of their eggs to try.   The pigs live like the on the farm CharlottesWeb was talking about yesterday - large fenced in pasture throughout the woods! I was extra excited to learn that they are going to be getting turkeys to have for the holidays this year!  We couldn't find somewhere local last year and had to go for the grocery store "natural" brand.  I'll try to get to a blog post this week.

  • I'm glad you made it through the chickens. It's all about practice. I can take apart a chicken in 3-4 minutes now.

    DH & I are planning to clear out the freezer & then start buying bulk local/organic. 

  • That's awesome!  I'm glad it went well.  I was telling DH about your plans, I'll forward him this post.  It's great that some of them came halved, I would think that's the hardest part.

    We've considered buying a whole bunch at once, but our Farmer's Market is open year-round so we can get meat whenever we want.  Your way may be cheaper though, I'd have to talk to DH about that (he's in charge of the money).

    They sound like the perfect, humanely raised chickens.  Don't you love finding that?  Through much trial and error, visiting farms, and talking in-depth with the farmer, we finally have "our chicken & pork person" and "our beef person" and "our produce person."  I get such a good feeling knowing that I've researched them to death already, and that they're exactly what I want.

    They are in Lambertville, NJ - It's pretty far from the shore but I would gladly give you the info if you can't find anything closer!  It was $4.50/lb regularly, bulk (10+ birds) for $3.50/lb. 

  • Wow, that's a great price!  Would you mind posting the details?  Lambertville is only about an hour from here, so that's totally doable.
