Anyone have a good recipe for lentils, as a main dish........and bonus points if it's kid approved........
Thanks!
Re: Lentils
We make this recipe all the time. It's pretty much become a staple at our house.
http://allrecipes.com//Recipe/chicken-and-lentils/Detail.aspxIna Garten has a recipe called Stewed Lentils and tomatoes that is so so yummy. I'm sure the foodnetwork website has the recipe listed.
My 2 year old couldn't get enough of it. It isn't visually beautiful, so my 4 year old wouldn't even try it. I served it with a nice warm loaf of bread, or rice is good too.
A blog I read, Rhodey Girl Tests, just did a handful of recipes with lentils a couple weeks ago. Some looked super yummy! http://rhodeygirltests.com/
Also, there is one that we LOVE and my 9-month old eats up: Indian Spiced Lentils with Chicken...it's really tasty! http://crockpot365.blogspot.com/2009/10/indian-spiced-lentils-with-chicken-slow.html
This isn't quite an 'entree', but I make an awesome lentil soup.. so easy. DH likes it so that must mean something!
I use a whole bag of red lentils for this. Simmer in vegetable broth and add in lots of veggies - you can be creative. I generally use celery, carrots, garlic, onion, and some kale. Then I usually add some tumeric or other spices (tumeric has good health benefits and it makes it pretty lol!).
It tastes so good and is super healthy. I started making it with leftover CSA veggies, and also to help with breastfeeding because I felt like I wasn't getting enough nutrients (during BFing).
