Dinner on the Lake- Recipes Needed!

We are heading out with some neighbors for an evening of water-skiing and fun on the lake later this week.  Each couple is going to bring a dish to share for dinner.  One couple is bringing tomato-cucumber-basil salad.  I'm not sure what to bring!  I'm looking for something that is pretty hearty since the three guys are pretty big eaters.  Any ideas?

ETA:  I have a bowl with an ice pack in the bottom, so mayo doesn't need to be avoided.

  • I usually do Cowboy Caviar http://allrecipes.com//Recipe/cowboy-caviar/Detail.aspx , Buffalo Chicken dip or Guacamole.  All served with tortilla chips or Fritos for the buffalo dip.

    Buffalo Dip: 2 lb chicken, 1/2 bottle wing sauce (more or less to taste) [this is wing sauce, not just hot sauce, already has butter in it], 1 block of cream cheese, 2 cups (1 bag) shredded Italian cheese blend, 1 cup of blue cheese dressing. 

    Cook and shred the chicken and mix with the wing sauce.  In another bowl, mix the other ingredients.  Spread chicken in a baking dish and then the cheese mixture on top of that.  Bake at 400 for ~30 min or until bubbly.

    Guacemole: Avacado, salt, lime juice, chopped red onion, jalepenos,  tomato and cilantro

  • What about chicken salad w/ crackers or croissants?
