Can I make this tonight...for tomorrow?
I'm trying to get as much done as I can tonight so I am not rushed tomorrow before everyone comes over.
I decided I wanted "S'mores on a Stick." I put the marshmallows at the end of a popsicle stick, dip it in chocolate, and roll it in crushed graham cracker/RW&B sprinkles. Great alternative since I refused to get out the fire pit in this heat.
Do you think I could make these tonight and then refrigerate them until tomorrow just before our guests arrive? I'm afraid the marshmallow will taste funny/hard. What do you think?

Absolutely! I think they will be fine made the night before.

Are you planning on using the kind of chocolate that hardens when it cools? If so, I'd probably store them in an air-tight container and leave them on the counter or "in a cool, dry place".
When I open a bag of marshmallows I usually just close it with a bread tie or throw them in a ziploc bag and they keep for a long time. I'd be worried that putting them in the fridge would make them kinda stale.
So I say make them tonight, and take pictures because they sound super cute!
