Zucchini the size of baseball bats!

We were on vacation for 5 days.  I checked the garden before we left and the zukes were, at best, 1" long.

Got back and they're the over a foot.

I grated one yesterday and turned it into 4 loaves of bread and 2 1/2 dozen muffins.

I have 3 more.

Edit: I miscounted - it made TWO and a half dozen muffins.  2 dozen regular, 1 dozen chocolate.

    I've picked one so far. I have a few baby ones out there that should be ready in a few days. Have you had any problems with those borers? I noticed yesterday parts of my plants are yellow and there are holes in the base of the stem. :( Any tips?! 

  • Wow! I'm jealous! We have a few tiny ones, and have harvested one big one.
  • ok that was weird. it didn't post my first response, so I wrote a second. Now they are both there! Sorry...
  • Since my garden is at my parents farm, it takes me much longer to get out there and pick. I love small zukes, however, if it is 5 or 6 days between visits, I tend to have super huge ones. We usually only do bread out of them because they tend to be too crazy otherwise. Sounds like you will have plenty of goodies.
  • You're going to need this recipe:

    Zucchini pizza

    Preheat oven to 375

    3.5 C Zucchini. Grated with skin and with as much moisture as possible squeezed out.
    3 eggs.
    1/2 C Parmesan
    1/2 C Mozzarella
    1/2 C flour (I probably did closer to 3/4 and used whole wheat flour.)
    Fresh chopped basil

    Mix all of the above together and press into a 9x13 greased pan. Brush some olive oil on top and throw it under the broiler for a bit if you want to brown it up. Bake at 375 for 25 minutes.

    Then throw on your favorite pizza topings and bake as usual.

  • Mmmm...the perfect size to shred and freeze (for fresh zucchini bread in winter!), make faux apple pies and stuffed zucchini with!  I am so missing my zucchini this year!
