What can you freeze and can?

Can any vegetable be frozen or canned? When freezing, do they need to be cooked first?

I don't want anything to go to waste here!

  • I'd recommend seeing if your library has some books on the subject.  I have Putting By that goes into both canning & freezing.

    Broadly, YES, any vegetable can be frozen OR canned.  However, there is a different procedure for each vegetable.  Meaning, things like beans, broccoli, etc. often need to be blanched (a book can give you times for the cooking part) for freezing and use a pressure canner for canning.  Tomatoes can be frozen raw or cooked (like in a sauce) or canned using a boiling water bath (if you add additional acid).  Things like zucchini & eggplant I like to grill and then freeze or do more of a pickle or relish for canning.

    If you're going the canning route, be sure to follow the "recipes"/guidelines EXACTLY.  Improperly canned food can lead to serious illness, so no messing around!
