I'm trying to plan our meals for next week, and I'm hoping to get to the natural foods store tomorrow for some good ingredients. So tell me...what are you eating these days? TIA!
Re: Need menu ideas
I use branny's blog (brannyboilsover.com) for a lot of healthy recipes, but allrecipes.com is another good one. Every week I plan to make five dinners: a soup, a meat dish, a "comfort" option(usually pasta), something vegetarian, and a seafood. Based on those and what's available from my farmers market I just try to find the most healthy recipes I can.

This past week we had:
Stir fry with veggies from our garden (sauce was soy sauce, chili oil and sesame oil) and brown rice
Green bean and new potato salad with chickpeas added for protein
Vegetarian chili (beans, tomato sauce, in season veggies, and spices)
Grilled veggies (veggies are summer squash, green beans, brocolli, and a bell pepper) and quorn fake chicken patties for me and steak for DH
Lentil and quinoa salad with swiss chard and feta
Most of the veggies this time of year are from our garden, and then I fill in with whatever local stuff the co-op has.
This week we're having:

We are getting lots of fresh veggies from the garden and farmers market, so basing meals around that.
We made a rotisserie chx last night w/a recipe from the newest Bon Appetit magazine; it has lots of great grilled recipes. I also use allrecipes a lot. I have a "quick dinners" tag in my blog, too.
I love making healthy fried rice.
I use 1 package of brown rice, scramble up 2 egg whites(add in the wok after it's scrambled), add 3 tbls of organic soy sauce with 1 tbls of organic brown sugar, and then add in your veggies ( a little bit of corn, diced onions, + peas). Mix it all up and it's sooo good and healthy for you!
