Help with Cucumbers, too many to handle

I have a million cucumbers this week and need a few good recipes on what to do with them. I know a lot of people make freezer pickles or Bread and Butter pickles but I dont have great recipes for either. If you have any, please share. I am also looking for other recipes for cucumbers. We are already making kimchee pickles this week, so I have a feeling that I will be on pickle overload.

  • Why not share some with neighbors and co-workers? There are only so many cucumbers/pickles that two people can eat! LOL

    I don't have any pickle recipes, but I normally eat cucumber and tomato salad during the summer. It's just diced cucmbers, tomatoes, a little bit of vinegar, and salt and pepper (to taste).

  • We are working on giving them away, I am just hoping they slow up production a little Big Smile. I will try the tomato cucumber salad. That sounds fresh and delicious.

     

  • If you leave them on the vine, I've read that will slow the production. Obviously, don't let them rot, but don't pick them right away.

  • We did do this - we call them our sacrifice cucumbers, because they are usually inedible by the time we get to them. I am hoping it will slow down ,but for now I have made friends at work and neighbors.

    That's all I've got written up.  Generally we eat them fresh - peel, slice, salt and munch away.  Or toss with some vinegar and onions.

  • You can give them to me.  I had planned on canning and making pickles with my cucumbers but my vines withered up and died and hardly produced any cucumbers.  I don't know what happened.

  • I know it sounds weird, but when we were in Thailand they totally had cucumbers in their veggie stir-fries (so, the cukes were warm, not cold)

    Might be something to try?

  • This may also sound weird, but one of the latest trend in cocktails is herbal ones - like a cucumber martini (which I've had and is DIVINE. one of the few times I like a gin martini).  You could totally do a cucumber themed cocktail party!

    I've got a Pimm's Cup recipe in my blog that is *delicious* and uses cucumbers.

    Also, I like making cucumber "cups" (cut cukes in like 2" slices & scoop out the seeds...but not all the way to the bottom.  this makes a cup) and fill with goat cheese or an herb-y cream cheese.

    And, I think there's a cool cucumber soup.  I think it involves plain yogurt or something.  Does gazpacho have cucumbers in it?

  • Ever made tzaziki (sp?) sauce?  It's delicious, and requires lots of cucumbers.
