Kung Pao Peppers--picked too early
My husband came home from our sad little community garden today with a few kung pao peppers that were still green. I told him him picked them too early--but he didn't know what he was supposed to be seeing when he picked them.
Is there anything we can do to ripen them?

ugh, you can totally eat them green. In fact, in the beginning, we eat them green to encourage the plant to keep producing.
I mean, red bell peppers are first green peppers & are still edible...
That makes sense. I wonder if they are less spicy green? Probably not! I might toss some into my pad thai this weekend and see how it goes.
