If you cook with coconut oil

How do you keep it from solidifying?

For example, we made banana bread with it.  As I was mixing the batter it was solidifying.  It was mixed with eggs so I wasn't about to pop it in the microwave or whatnot.  

I want to order a lot more but I am a little worried about getting it to work in baking recipes (because of the solidifying).

  • Hmm....I cook with it but I don't eat grains so I don't know about baking. I usually just fry my stuff in (ie. eggs) or use it mixed in with other things (ie. almond butter). I also slather ds in it from head to toe at night instead of petroleum based products like aquaphor and use it on myself instead of lotion at night. Needless to say, we order a gallon at a time.

    ETA: I stand corrected....I did make muffins with almond flour and I just heated my coconut oil to melt and then mixed with the almond flour, eggs, vanilla, baking powder, etc afterwards. It worked fine.

  • Aww,  I have a little jar myself (15oz I think) that I slather my DD in as well.  She has eczema and itchy skin so I cover her from head to toe in it too!  And then myself of course :)
  • I've never had it solidify on me but make sure the other ingredients are room temp and not straight from the frig and that the coconut oil is completely melted.

  • Coconut oil solidifies at 76 degrees F, so as long as your other ingredients are room temp (or a little warmer) you won't have a problem with it. I bake with it all the time and don't have an issue. 
  • Well, I'm cooking with it so its in a hot pan! I've never baked with it. I could see that being an issue though. Even without AC its only gotten hot enough on one day to liquefy the lump of coconut oil I keep in my bathroom.
