Re: Birthday Menu
The only thing I see is that you have two pasta salads. I'd probably drop one and sub a broccoli salad or broccoli slaw.
If you want another app maybe a shrimp or crab spread or cheese and crackers?
How many people is this for again?
Here is something I see...your 3 appetizer choices are all dips and 2 of them being a 'chip and dip' combo. I would keep the first two and swap out the chips and salsa for something more substantial...like a shrimp appetizer or something like mini-sliders or tomato bruschetta with proscuito. I think if you make one of the appertizers heartier you won't feel like you need to add more food...since this menu sounds like a lot of food already.
I also don't remember how many people or their ages.
I agree that you don't need another app, just a different one. Buffalo chicken dip is expensive to make, so that's my suggestion to cut. It also has to stay hot, so unless you're using a crock-pot, it's last minute effort. I think cheese & crackers would be a good substitute.
For the desserts, I'd do the berry bars instead of the tequila bars. And probably just one kind of cupcake is fine since you have other options.
