how do you know when eggplant are ready to be picked?

We have the long skinny type eggplant, which I've never grown before (DH bought them by accident).  How do you know when they are ready to pick, any tips?

TIA!

Re: how do you know when eggplant are ready to be picked?

  • I'm in a CSA and our farmer grows these kind. Hers are usually around 8-12 inches long. They should feel round and firm (but not rock hard) to the touch and have a nice purple shine to them. If they start to get wrinkled skin and dehydrated looking then you've waited too long. How long are they now?

I've also found my home grown eggplant never get as big and globey (I've never tried growing the skinny ones) as what I see in the store. So don't wait for it to get as big as ones you see in a market.

    Yuuum! Baba ghanoush!
